I wasn’t exactly sure what to think when I first saw crispy/fried egg salad…when that happens the only answer is to make it ourselves and oh snap did it ever become the best egg salad sandwich ever!

  1. Tomorrow. This is what I am going to make. Against my rational mind, you understand. But I am a scientist (ahem) and I have to prove, uh, something. And I can't wait. Our chicken, Florence (said with a French pronunciation) lays the most perfect eggs. Dependably gorgeous dark orange yolks. And now I have a reason to get berlinn (I'm Southern, we say berlinn, not boiling) some o dem beauties.

  2. I just made this. It feels super rich. The fried crust with the mayo is very heavy and even if you season way more than Sam, the filling gets lost. Just eat an egg salad sandwich.

  3. You skipped the toughest part. How do you make perfectly hard boiled eggs? 20 years ago it was no problem I boiled the eggs for 15 minutes dumped out the hot water filled the pot with cold water then when the eggs cooled I peeled them with no issues. Now since I know the boiling point of water has not changed and 15 minutes is still 900 seconds I'm assuming the eggs have changed. Any idea why that happened? do you have any ideas about how to compensate for this? I still like egg salad but I can't make the eggs when my kids are around because they don't need to learn french yet.

  4. This is absolute genius! Egg Salad is one of my favorite sandwiches already and I've NEVER thought of frying one and now I'll be doing this almost EVERYTIME I make egg salad. This was soooo good.

  5. The funny part is nobody who knows anything about cooking is making this. It'll be made by the 1% who've cooked a few things before and they will screw it up massively and still think its amazing. Its just a silly mess.
