  1. Cow head pepper soup with Fufu. I didn't see you season the meat, though.
    Here, in Nigeria, the meat is seasoned with fragrant spices, chili, onions ginger, garlic and finished with fresh basil and curry leaves. The chili is boiled with the meat and not a separate sauce. Yummy! Finger licking good. The cow head is first roasted whole before butchering. The skin is a delicacy.
    The pap is maize fufu. Made same way.

  2. One thing I love about Africans when they are cooking, they don't have specific measurements they just do measure according to their feelings.
