Flo please can you teach how to make steamed egusi cakes someday? Since my gran passed away in 1987, I've not eaten it again. Some people call it Agbara-Ati. They are little flat spicy hot egusi cakes steam in banana leaves. It's one of the traditional delicacies that has disappeared from our Igbo cuisine in contemporary times. Sometimes it's also smoked dry over a log fire. Do you know how to make it?

I make a similar sauce on any Friday when the fridge is full of left over veggies from last weekend's grocery shopping. Also just wanted to point out that its not the cornflour that makes your chicken pepper sauce too salty, it's the chemistry that occurs when it's added. Cornflour is added as a thickner & this means that it quickly adds to the thickness of the sauce & increases the viscosity (resistance to flow or being running). It means that all earlier seasonings, then become more concentrated & therefore the saltiness gets more profound with the reduction in volume. It's a good job you've warned subscribers about this.
