Cape Verdean gufong/ gufonghino/ fungine recipe.

Plain version:
2/3 cup instant mashed potato flakes
2/3 cup water
1/4 cup milk
1 tbs butter
2 cups precooked yellow corn meal (finely ground)
1/2 cup white sugar (use up to one full cup if you like it very sweet)
2 tsp baking powder
1 cup bisquick
2 tbs vegetable oil

  1. Wow! This is very different than the recipe that was handed down to me. I love how you included original & banana. My Nana spoke of a banana recipe, I just haven't got around to it yet. What is the measurement of the amount of mashed potato that you use? 2 tbsp? What temp do you fry on, and for how long?
