Dear Aunty Flo, I've tried this method about twice and I'm usually conscious of the heat level but the moment I add the meat stock, my egusi always turns brown and taste burnt. I ended up discarding the soup after eating once and I'm almost giving up on frying egusi ever again 😭😭. Please help!

Thank you so much madam. You just solved a riddle I've been worried about for a long while now. Bought grounded egusi from the markets in Nigeria, cooked egusi soup frying method as this is all I learned, ate with a friend and at midnight, she started purging and vomiting. I couldn't place what went wrong. I was also purging the next day. I thought I bought bad egusi or the egusi was laced with something else, you know all these sellers. I vowed never to buy grounded egusi. Always to buy the seeds and ground myself.
The remaining soup which I had stored in the freezer, I brought it out to thaw a bit, poured lots of water in it and allowed to cook for about 15-20 mins and put more bitter leave (I thought it was medicinal), before I set it to cool down and returned to freezer for storage. The next time I ate it ALONE OF COURSE. 😂 😂 😂 And it didn't purge me.
So from your video, I just realised I that I probably didn't allow the egusi itself to cook for long and we'll before concluding the soup. Yes, cos after I recooked the leftover, it was fine. No tummy upset again.

Living in Africa with my Nigerian church family they served this with Garri and egusi with Garri its simple to cook this one ooo it was on the 1st day then the next day we had rice with the egsui oh my goodness… I miss Africa and My Nigerian church family and it was so delicious yummy…

I'm so sad right now… i just burned my first egusi. I got a new range and it is much hotter than my old one. Lesson learned. But how do i use the meat i cooked but no stock is left? I just ordered more egusi on Amazon.

I already tried cooking JOLLOF RICE….Next I want to try Egusi soup. I've seen egusi in a shop but I'm not sure that it is authentic because the color seems to have a light yellow tinge to it. Is it suppose to look like that?
