  1. Very nice recipe! Someone gave me fresh eggplant and fresh laid eggs (1 day old!) from a farmers market so I wanted to make some use of the eggplant. I made a lot of the Shashushka and spit it before I added eggs and saved some for later to add more eggs to it later. I always think Eggplant is so beautiful and then when I buy it I have no idea what to do with it. This is going to be my recipe from now on!! So easy and fast!! I need to get more spices tho!!

  3. it looks delicious but it's not morrocan in morroco we call it taktouka and its made with peppers and no eggs the one made with eggplants is called zaalouk and it does not contain eggs either

Great recipe victoria,iam Algerian and we do it thesame way,in tunisia too,sometimes we use peppers instead of eggplants and sometimes we use only fresh diced tomatoes,onion and lot of garlic and spices,you can add spicy meat balls or try it with sausages,in chekchouka you can add anything you like and it will always be delicious.thanks victoria.

OMG, that looks so luscious!  I'll look through your channel, but do you have ideas or recipes for cooking Dandelion greens?  We are using organic fertilizer in our yard, and I am harvesting some of the dandelion greens, and don't want to boil the heck out of them to get rid of the bitterness.  I'm thinking sautéing with Indian spices and vinegar [maybe some thin sliced fennel].  Any ideas?

    Ingredients
    2 lb eggplants
    1/3 cup extra virgin olive oil
    1 large onion
    1/2 teaspoon cumin seeds
    1 teaspoon mustard seeds
    1/4 teaspoon fenugreek
    1/2 teaspoon chili flakes
    1/2 teaspoon ground coriander seeds
    1 teaspoon garlic powder or 5 chopped garlic cloves
    1/4 teaspoon cinnamon
    2 cardamom pods
    170 g can organic diced tomatoes
    170 g can water + as needed
    2 tablespoons organic tomato paste
    1 bay leaf
    1 teaspoon Himalayan pink salt
    up to 12 extra large organic eggs
    2 tablespoons chopped parsley
