The sausage is boerewors, it is made out of beef left overs, including pork left overs. It was in invented by Afrikaner boers in South Africa as a way of reducing meat wastage. It used to be the cheapest meat for many South Africans.
It is now the main delicacy for braai, braai without boerewors is not braai – BBQ.
