Jollof Rice (Spicy West African Rice) | Food Wishes
This is my favorite method for making Jollof rice, West Africaโs most popular dish. This spicy, super flavorful rice dish is usually made as a side dish, but itโs more than satisfying enough to served as a main course. Enjoy!
PLEASE NOTE: After you add the sauce to the rice, TURN HEAT TO HIGH to bring to a simmer! The caption is wrong….

making thisright now. can't wait until it's done, theres the timer now, 12 minutes to go!
Well done chef
What is that chicken (honey like) stuff? I have never seen it before.
This is some really flavorful rice, great as a main course or side, but my first batch was a little too intense. After making it once, next time I plan to make the following adjustments 1) Skip the habanero (I like spicy, but the heat was too much, I think a fresno or jalapeno with seeds in should provide enough heat for me) 2) Use less olive oil (1/4 cup instead of 1/3 cup) 3) Add in 4 deseeded and diced roma tomatoes while I add in the red onion 4) Use 1 Tbsp smoked paprika instead of 2 5) Use 2.5 cups basmati rice instead of 2.25 6) Throw in 2 Tbsp butter at the end or maybe more
Iโve always feared making jollof rice due to overthinking, just like you said. But after watching your recipe, Iโve made the best jollof rice today. Thank you Chef John!
Nice
I am Nigerian and I love this video.
What is really bother me is you cooking with a metal spoon. No african does that, its weird
looked good but seems a shill for another magazine or website – and really, sitting through that sing-songy drama?
I am Turkish. I heard about this rice from a black football player. I like it, I will try it. ๐ฅ
I'd use a little wooden paddle (or a wooden spoon) to fluff up the rice, like the Japanese do for their sushi rice. Otherwise, another beautiful recipe from the OG chef John ๐
Sir Lewis missing out on jerk chicken and jollof rice. He will be back ๐
Why are u speaking like that? Lol
There always seems to be a strange cadence to his speech in his videos. Not that his videos are bad. I have a number saved that I want to use. This is just an oddity that I've noticed.
I'm surprised there's no chili in it. I could have sworn there would be loads of chili powder.
Man your videos are therapeutic! ๐โค
Forgive me if already asked to you chef John but does one wash the rice till water runs clear as in other preparations or added as is? Thank you
I had the urge to make Jollof rice for the first time. I clicked your video because itโs always consistent and fun to watch! Iโm picking up my ingredients today!! ๐
Such a great presentation of a recipe!
Chef John, thank you!
I will definitely cook your version of Jollof rice.
Interesting….The DNA of this resembles an Italian tomato sauce.
This is the best description of Jollof recipe on earth. Nigerians scare me with all the complicated steps they follow which is why I never cook Jollof. Now, I will cook it fearlessly. Good job sir! Thank you!
I didnโt hear,if you washed the rice first or not,
I have seen many videos, and they all washed the rice .
I like yours,itโs a smaller version,instead of a huge pot .
Chef John deserves the Nobel Peace Prize for finally ending the Jollof War between Nigeria and Ghana
I just made this with my brother. It's delicious! Thanks
i heard that this thing make your pp big๐ฝ
You should make swahili pilau next! With kachumbari!
Fantastic sir well done ๐๐ฟ
I love a good tomato rice dish. I can't wait to try this version. ๐
Is it me or does chief John sound extra sexy on this on ๐. Like I need a smoke after this ๐
As a Ghanaian with immigrant parents growing up this has always been and forever will be my favorite food in existence. Still trying to improve my own Jollof rice whenever I make it so it can eventually taste as good as my momโs lol.
Do we rinse the rice before coming?
Hi Chef John, is the basmati rice washed before adding in?
This guy is a legend lol
I was so excited to see your version. I'm Afro-American and so elated to see the various African counties approve your recipe. I made it today awesome sauce!!! Thank you!!!!
This is good, but a little more spicy than i like. Next time I'll do half jalapeรฑo or not at all. Im not sensitive to spicy but i couldn't eat a lot at one time due to it being spicy
This has become one of my regular dishes. This will feed me 2 days.
I am Australian (born Filipino), and love this rice! Thanks for the recipe.
It's great that my school had diverse dishes and people and learned so much! The dish is yummy for sure
Do you need to rinse the rise first or no?
How much rice did you add please????
How would you make this flavorful but less spicy? Im taking it to a soccer banquet for a side dish.
This video was posted 5 months ago but Iโm just seeing it and it made such a huge smile spread across my face. I am a Nigerian and it makes me so happy that the Chef whose content I grew up watching is enjoying our African cuisine. I hope you liked it Chef John and thank you for the video๐๐๐
Danke aus Deutschland fรผr dieses liebevoll gekochte Gericht. โค
Jollof is the African version of Chinese fried rice
This is good too because he is true to the spiciness!
I canโt watch this anymore cuz the way he talks is annoying!!!!
You granted my wish! I was hoping you made African cuisine ๐
