How to Make Abolo (Ablo) | Gluten Free Beninese Steamed Rice Cakes


Abolo or ablo are bouncy steamed rice cakes which are commonly eaten in Western African countries.

They are made with a combination of corn starch, corn flour, and rice flour. By themselves the steamed buns are quite plain but paired with a hearty stew or soup they are the perfect accompaniment for a filling meal.

  2. Abolo or ablo is one of the popular foods among the Ewes (Volta Region) in Ghana. We have the steamed and baked versions. They are sold at stopovers in Atimpoku, Kpong and Sogakofe to travellers. It is also common in Togo and Cote D'Ivoire and as you said Benin. It is so wonderful to know how food connects us all over the world.❤️👌🏾

  3. As I still had the steamer setup from making the GermKnödel, I decided to give these a try. Maybe it was my "superfine" rice flour, but after mixing everything, the mixture was a bit runny, so I added more rice flour to get to the same dough consistency as shown in the video. It did rise nicely and I saw lots of fermentation bubbles. I tried using foil cupcake liners (they just made flat buns, but texture and taste were great!) – then I remembered I had some silicon heart shaped molds – I used those – those held up much better and in a perfectly cute heart shape. Now I need to make a stew or hearty soup 😁 Thanks for sharing this recipe. Photo has been posted 😊
