Ok, I'm from defendants of Brava, Cape Verde, now saying this my older brother told me this dish is Manchupa, and not Cachupa. Help?! I'm just learning my culture.
Great job!
Where did you find the salt pork? Market Basket, Shaws, and Stop & Shop have been out recently.
Cachupa: cah-choo-puh

My mother got this recipe in the 40's from a Portuguese lady that she worked with at the Del Monte Cannery in Sacramento, CA. I was raised on Jargacida, we called it Gergacita.
Instead of linguica my mom used bacon. She always used lima beans. The rest of the recipe was the same. When the bacon/onions were finished sauteing, she'd add in the paprika and make sure that it cooked for a minute or two. Then came the rice, being stirred so all the rice was covered with the bacon grease and paprika. A can of lima beans with the water was added and one more can of water. Salt and pepper, then when it was boiling, the heat was turned down a lid was put on the pan, waited 20 minutes (1 cup of rice) and it was done. We ate Jagacida at least 1-2 a week with catsup on top and loved it. I'm now 81 y/o and still make it for my son and me. I'm taking it to a potluck tomorrow. I love GERGACITA.
