That "spinach" is actually Swiss Chard, no? (actual spinach doesn't have that whitish stem) Didn't you also forget the salt in the boiling water …. or is salt free water perhaps a Botswana thing?
This looks similar to grits and or con-pon which is deep fry until golden and eaten with greens or beans. Yum.
