  1. i'm most curious to try the fermented maize and the bush bread.
    i grew up eating lots of different maize foods. grits, which i think are sort of like your porrige but not fermented, and we mix in different things. every town or regiom has different things they add to grits, some sweet, some spicy, some savory. people will fight over the "proper" way to make it.

    I also grew up eating polenta, which is boiled maize, salt, butter and cheese, from my father's Italian family.
    the cheese is called Parmigiano Reggiano and has a strong umami flavor. my favorite is to eat it with mushroom sauce.

    We also have places that sell tamales in my neighborhood. steamed maize cakes with fillings like pork, or peppers and cheese. i feel like you might really enjoy tamales. sort of familiar and sort of not.
    that's why i want to try fermented maize porridge.
