This amazing golden butter rice uses a very easy, but almost forgotten cooking method where we cook the rice in the butter, and just don’t stir some into already cooked rice. The difference it huge! I made this according to the recipe….that's a lot of ginger, anyhow I served it with lamb shanks with saba (chef john) and the two really complimented each other. awesome.

Tried it last night. Added cinnamon, cumin, garlic powder. Lid was not fitted properly. Had to uncover to check condition of rice. Took it off heat at 15 minutes and fluffed after 10 more. Rice texture was spot on. Fluffy. Taste was phenomenal! Served with shrimp – honey, garlic, ginger, onions, diced tomatoes, white wine, cayenne, chili powder, rice wine vinegar, oregano, tom paste. Put stuff in, hoped for the best. Everything turned out great.
This rice was stellar on its own. I can see why you could eat this by itself. I couldn’t stop tasting it while getting table set and everyone organized. Thanks for a great recipe and for a lesson on getting rice fluffy.

I have made this 3 times already, it's so good and so easy to make. The only thing I do differently is that I transfer everything into my rice cooker. It comes out perfect.
One question on that method, does the lid have a vent or is it a perfectly enclosed lid?
