Sincerely not wanting to bash or beat down this method, I’m simply suspecting that parts of it are unnecessary and not actually true to the West or Central African culture that I assume you are referencing. I am not an expert, but still highly suspecting my African friends would not be over liquifying this dish as shown, therefore would not need to wrap each ball of Fufu in plastic wrap to keep its form.

Instead, I see my friends keeping the added moisture down to an appropriate level, and working the “dough” so that it becomes firmer the more the starch is handled or kneaded. Correct me if I’m wrong, but this should be formed so it can take the shape of a ball in the palms of our hand, and then the dough indented in the center as it spreads a bit. This is so we can use it almost like a soft flat bread to scoop up our food. Like using as a utensil instead of flatware to eat. I’ve yet to see this eaten with such soft/moist texture that a fork is necessary(?).
I’m interested to hear others thoughts or experiences with this.
