First he said in his retreat people eat at 10 am and then at 4pm. Then in the end he says there should be an 8 hour gap between meals. This doesn't add up (??).

Hungry is different in high insulin index and low insulin index..
So hungry is not victory.. eating foods giving high insulin index, creates more hunger unnecessarly.. intermittent fasting,one meal a day,is good.
But not always.. one meal creates low nutrition 100%, you cannot be athelete or an doing more work.,you can only sit in one place.
