I thought the Nigerian method of soaking cassava in water for 4 days for it to ferment removes the cyanide (toxin) in the cassava.

I’m from the US but I lived in Ghana for a couple years and fell in love with fufu! Easily my favorite food with light soup and chicken! I even learned to pound and would help out pounding! I got pretty good!

This dish is a two person job. You must have strength and patience to have a successful recipe. One day I will try, God willing, but I rather use traditional mortar and pestel. Great alternative to enriched flour breads.
