Ngon (Delicious) can be pronounced as in "Hang on" without the first half of Ha..ng- on. Hope it makes sense.

Hahaha. Your egg reaction. We had balut when we were in Cambodia. We didn't mind it at all. As you said, the "broth" in the egg tasted like chicken soup, and the rest like egg.

Chả quế is always grilled that make its color different from normal fried chả. It has 2 layers, the first is pork( without fat) and cinnamon, the second is pork( with fat but not cinnamon) that is why you find chả quế is less fatty than normal chả
