Good effort with layering, but if a mumu is not cooked in a ground oven with stones you can't really draw out the flavour of the dish, Meat has to have a large fat content so that it seeps and marinates the entire dish, most mumus in ground ovens cook for over 3 hours, chicken is rarely used cause it cooks to see easily and if it's used it's usually tough chicken meat that's under with the base, aside from meat kumu is one of the most important aspect since the juice from them mixed with the fat from the pork infuses everything together. Good effort and well done in regards with the limitations. Garlic and onion is also used.
