In Senegal they use their local broken rice, this method of steaming allows the rice to parboil and soften up a bit without becoming too soft and mashy. Then the super hot water just finishes it up nicely because when it's just steamed it's still grainy inside and not cooked through

Gambia’s version of super kanja is completely different. Few similarities yes but still different with ingredients and the cooking method. You should visit. Gambia is a neighboring country with Senegal.
