Why on earth are you adding sugar to it? Mango is sweet enough, and sugar is not healthy. Ruined the whole thing for me.
Good idea with the ginger. Need to try this combination one day. I will be using blender though. Life in London is too busy to be doing things manually. But if I lived in a village and didn't have to spend 10 hours a day at work I'd probably enjoy that kind of preparation.

Those look like what we call Indian mangoes, which are common in backyards in Philippine provinces. I have six in my yard and the fruits literrally just fall down during the fruiting season, from March to May. They are sweet, but not as sweet as the other varieties of Philippine mangoes that we export
