I travelled all the way to Benin, West Africa to find the traditional ingredients of the original gumbo – West African okra stew. I met a family in the market and was invited back home to help prepare, cook, and eat the dish that would eventually become Louisiana gumbo hundreds of years later following the transatlantic slave trade.
