Stumbled on this somehow and man you were staying at my city 6th of october, could recommend "Koshary Al-Tahrir" as best in the city, "Sahib Sahbo" is not as good and yes even Koshary can have different tastes & ways of presentation depending on quality of ingredients and chefs working on it, or the most famous Koshary place downtown called "KOSHARY ABOU TAREK" arguably best in the country, a multistorey building that serves the masses & famous people alike, incredible place

  3. Enjoyed following you on your Egyptian food tour Chris,me and my wife visited Sharm El Sheikh in March and the food was excellent in the hotel,also had the best rice pudding ever,freshly baked with pistachios,rose water and honey drizzled over the top man it was da bomb

  5. guys with corn in the beginning were so rude and trying to just take your money so if you come again don't buy from them
    karam el sham is one of the worst restaurants here it's famous but it's not good too if you wanna eat some Syrian shawrma and fried chicken i recommend abo Yousef al suri it's in 19 A el higaz st. Mohandesen. it's my favorite
    the guy in the end didn't say anything bad he just can't speak English but he was happy to talk to you so he was trying to say anything and joking with you because he likes foreigners don't worry

    now that's how you make koshari if you wanna eat it again ^^

    fry some onion slices and you will use the oil that you used with onion with everything else I don’t like the onion itself but I made it every time just for that oil so don’t even think about getting rid of that oil and using new oil -_-

    (brown lentils and chickpeas are preferred to soak them for the whole night before making them but it’s fine to soak them for only 1 hour)

    soak the chickpeas for an hour at least then add them to boiled water with Minced Garlic just 1 or 2 will be enough and you can do it without garlic with only water and leave them to boil till they are well cooked and drain from water (for me I like the taste of that water so I put some lemon drops on the water and drink it xD )

    soak the brown lentils for an hour at least then drain from water and put some oil in a Pot on the stove and add the noodles (type of noodles we use with rice I think the name is Short Vermicelli) and when the noodles become gold add the brown lentils and white rice and also add the salt and stir them then add some water (just like how you make rice because I think you have deferent type of rice) and cover the pot. when you don’t see water (it’s all evaporated) decrease the heat. I think you need to stir them twice only or something like that. when the rice is cooked take the pot of the heat.

    we mostly use 3 types of pasta (Ditalini – spaghetti -penne but penne is less than the others and you must cut the spaghetti because we eat it with spoon not fork)

    add water and salt in a pot on the stove and when it’s boiled add the pasta (if you want to make it with only one type of pasta it’s okay but we usually use that 3 types) stir the pasta from time to time and when it get cooked drain from water.

    make some tomato sauce (some prefer it with onion but I prefer it with only garlic) put some oil in a pot on the stove and add some Minced Garlic then add the Tomato Puree (just add some tomatoes to the blender and blend them to make the Tomato Puree) and add salt and the seasoning (Cumin, Coriander and Black pepper) and when all the water from tomato evaporated add some water to make it more liquid than usual and leave it to boil

    to make “dakka” mince garlic, put it in a pot and add vinegar, lemon juice, and some spices as coriander and cumin, and some water. Put the pot on the oven and stir them till they get boiled

    and for the hot sauce add the rest of the oil on the stove make it a little bit hot and add some chili powder and some tomato sauce and dakka and stir them for few minutes

    you made all ingredients so pick a dish and put some pasta and add the rice, chickpeas, fried onion, and the 3 sauces but of course you can just add the tomato sauce if you don’t like dakka or hot sauce
    and you can remove any ingredient if you want and for the quantity it's up to you as with the rice ingredients some people use noddle more than rice some don't like lentils some use more rice and for the plate some like rice to be more than pasta and i'm one of those but the most of people like pasta to be more than rice so you can make it the way you like
