  1. Hello there, and thanks for watching. I’ve attached the list of ingredients in this comment for your convenience. I couldn’t fit a list this long In The description box. Please enjoy the recipes, and I hope you try them all 🙏🏽❤️
    1st recipe INGREDIENTS:
    * 2 large fresh tilapia cleaned and cut to desired sizes
    * 1/2 tsp garlic powder
    * 1/2 ginger powder
    * 1/4 tsp cayenne pepper
    * 1/4 tsp cumin powder
    * 1 tbsp all purpose seasoning or 1 chicken bouillon cube
    * 1/2 tsp crushed white pepper
    * 1 tsp salt (adjust amount to taste)
    * Avocado/vegetable oil for deep frying
    * Aromatics for frying – fresh thyme1 scotch bonnet chili, fresh Rosemary and small bundle of scallions

    Tomato base stew ingredients:

    * 2 red onion thinly sliced
    * Half cup of oil fish was dried in
    * Blend of 4 Scallions, 3 Scotch bonnet chilis, 6 Serrano chilis
    * 1/2 tsp curry powder
    * 1/2 tsp crushed white pepper
    * 1 tsp all purpose seasoning or 1 chicken stock cube
    * 4 cups tomato sauce
    * 1/2 tsp smoked paprika
    * Few optimal fresh onion rings for garnish

    Second recipe INGREDIENTS:
    * 1 large red snapper Fish 2lbs (cut to steaks)
    * season fish with (1/2 tsp each white pepper corns crushed, dry chili flakes, garlic Granules, onion Granules, salt, Thyme, and 1/4 tsp paprika)
    * 1 tbsp all purpose flour
    * oil for Deep frying
    * 6-8 shallots Thinly sliced
    * 1 red and green bell pepper
    * 1 jaleapeño pepper
    * 1 tbsp Thai chili minced
    * 1 tbsp garlic minced
    * salt to taste
    * 1/2 tsp crushed black pepper
    * 5-6 tbsp oil from deep fried fish

    Third recipe INGREDIENTS:
    Tamarind sauce ingredients:
    * 10 tamarind removed from pod
    * 1 & 1/2 cups hot water

    Fried tilapia ingredients:

    * 3 medium fresh whole tilapia cleaned
    * 1/4 tsp salt (adjust to taste)
    * 1/2 tsp all purpose seasoning (substitute chicken or vegetable bouillon)
    * 1/2 tsp crushed white pepper
    * Oil for deep frying
    * Optional sprig of scallions as aromatic for oil

    Smothering sauce ingredients:

    * 2 & 1/2 tbsp tamarind sauce
    * 2 cups = 32 oz tomato sauce
    * 1/2 cup chopped shallots (about 6 shallots)
    * 1/2 tsp curry powder
    * 1/4 cold pressed coconut oil
    * 1/2 tsp salt (adjust to taste)
    * 1/2 tsp all purpose seasoning
    * 1/4 tsp fresh or dry rosemary
    * 1 scotch bonnet chili minced
    * 1 tbsp minced garlic
    * 1 tbsp minced ginger

    Fourth recipe: INGREDIENTS FOR FRIED FISH:
    * 2 & 1/2 pound red snapper fish
    * 1/4 tsp of crushed white pepper
    * 1/4 tsp of granulated garlic
    * 1/4 tsp of salt or season to your preference
    * gallon peanut oil for deep frying (substitute with avocado oil or vegetable oil)

    INGREDIENTS FOR SALSA/ PICO DE GALLO:

    * 1 cup chopped tomatoes
    * 1/2 cup chopped onion
    * 1/2 cup chopped jalapeños (seeded)
    * 1/2 cup chopped red bell pepper
    * 1/4 cup cilantro
    * 2 Tbsp lemon or lime juice

    INGREDIENTS FOR GARLIC AND CHILI INFUSED OIL:

    * optional 3 cloves garlic thinly sliced
    * optional 6 small Thai chilis
    * optional 3 Tbsp vegetable or olive oil

    Fifth recipe INGREDIENTS:
    4 large pieces of whole cleaned tilapia
    4 large salad onions skinned and half’s
    4 scallions or spring onions
    4 cloves of garlic
    6 Serrano chili. Substitute with two habanero chilies or two scotch bonnet’s
    1 thumb size ginger
    1 sprig fresh rosemary and substitute with 1 teaspoon of dried rosemary
    2 cups of extra-virgin olive oil and substitute with same amount avocado oil or almond oil
    1 tablespoon chicken seasoning and substitute with one bouillon – use any flavor of your choice for an umami note
    1/4 tsp crushed black pepper
    1 tsp salt

    Sixth recipe INGREDIENTS:
    * 3 regular size mackerel cleaned and cut into steaks of 1&1/2” thickness
    * Marinade mackerel with 1/4 tsp each granulated garlic, onion, crushed black pepper, 1/2 tsp salt, or to taste, 1 tbsp olive oil, 1 tsp Worcestershire sauce, zest of 1 lime, or 1/2 tsp thyme
    * 1 each red and green bell peppers
    * Optional 2 banana peppers
    * 1 sprig or 1 tbsp rosemary
    * 1 tsp white Pepper corns
    * 1 habanero chili (adjust amount to taste)
    * 4 small bay leaves
    * 4 sprigs of spring onion
    * 4 large shallot onions or 1 large red onion
    * 10 Roma tomatoes (remove seeds)
    * 3 cloves of garlic
    * 1/2 tbsp Ginger
    * 1/3 cup olive oil
    * 1 tbsp paprika (optional)
    * 1 tsp Worcestershire sauce (substitute with maggi or soy sauce)
    * 1 tsp salt or to taste

    Seventh recipe INGREDIENTS:
    * 2 Large Red Snappers weighing 2 & 1/2 Lbs each
    * 3 bell Red peppers chopped for bed
    * 2 large onions (1 chopped for bed of vegetables, 1 wedged & roasted for dip
    * 3 medium tomatoes & roasted for dip
    * 6 Serrano chilis (4 chopped for bed of vegetables, 2 halved & roasted for dip)
    * 3 Tbsp lemon pepper for fish and vegetables
    * 1 tsp fish sauce for dip
    * olive oil for coating fish and vegetables
    * olive oil for drizzling on dip (optional)
    * 1 cup roasted peanuts
    * sprinkle of a pinch of salt on wedged onions and halved Serranos (optional)

    last recipe iNGREDIENTS:
    * About 1000 g grouper steaks (6-8 pieces) substitute with snapper, bass, or any fish low in oil content
    * Season fish with 1/2 tsp each salt, curry powder, vegetable bouillon, and 1/4 tsp crushed black pepper
    * 1 cup all purpose flour season with salt and pepper to taste
    * Cooking oil for deep frying fish
    Ingredients for stew:
    * 1 cup cold pressed coconut oil
    * About 10 small curry leaves (substitute with 4 fresh basil leaves, or 1 bay leaf
    * 1 large and 1/2 onions chopped
    * 1 heaping tbsp ginger and garlic paste (equal part ginger and garlic ground into a paste)
    * 2 heaping tbsp tomato paste
    * 1 tsp curry powder
    * 1 tsp vegetable bouillon
    * 4 cups tomato sauce
    * Season layers with salt and pepper to taste
    * Add whole habaneros for garnish, or use any garnish of choice
    * Stew cooking time is about 30 mins *
