  1. Bananas are not usually stored in the fridge ! They usually get black ! Fruits like oranges, pears, tangerines and pineapple once sit out to room temperature the juices usually set in better and more sweeter. once in the fridge the coolness stops the ripening process and the fruits not as juicy and sweet especially mangoes and pineapples. Usually the fruits are delivered to the supermarkets not fully ripened due to how they have to be transported and time in getting then delivered. So, they would need to be out in room temperature once you the customer buys them. Pineapple the sweetness sets in when it changes from that greenish colour and it turning a different yellowish or sun set colour and then it smells sweet and fragrant. If you buy a pineapple and it has no fragrant smell of pineapple and the skin feels hard on the outside it’s not fully ripened on the inside and it would be sour. Same with oranges once out in room temperature for about 2 days the texture of the skin is not tight or hard and the juice would begin to set in and you will see the colour slightly changing. I am from a tropical country and I am manager in food service, I know how certain fruits reacts to certain temperature ! When I procure bananas I tell my supplier to send them that once arrived I should be able to use within 3 days due to its delicate nature. sometimes, the pineapple is used 4-5 days later ! In North America where I have lived and due the the winter and summer season the winter season the fruits like plum, peaches nectarines ripen slowly in room temperature. Bananas usually come in a boat from the Caribbean so, they are not as fully ripened. Pineapple is from Purto Rico or Hawaii, I am not too sure which comes half ripened likewise.
